What it is
A convection oven circulates hot air with a fan, so heat reaches every tray evenly. It bakes faster and more evenly than a static oven, which suits cookies, croissants, pastries and roasting.
How it works
Heating elements or burners warm the chamber, and a fan pushes the air around the trays. Models range from small counter-top units to floor-standing ovens with a trolley that holds 10 or 12 trays. Some add steam or a proofer.
