What it is
A griddle is a flat, heated steel plate for cooking burgers, eggs, bacon, pancakes and stir-fries. Some plates have a grooved section for grill marks.
How it works
Burners or heating elements under a thick steel plate heat it evenly, and a thermostat holds the set temperature. A flat surface lets you cook many items at once and move them across temperature zones.
How to use it in the kitchen

Preheat the plate and lightly oil it.

Cook items in rows so timing stays even.

Scrape residue into the grease channel as you go.
