What it is

A chafing dish is the classic buffet server: a food pan sitting over hot water, under a lid, on a stand. It keeps rice, pasta, viands and soups hot for hours without scorching the bottom of the pan.

How it works

A burner or heater under the water pan warms the water, and the steam and gentle heat rise around the food pan above it. Because the food never touches direct flame, temperature stays even. Lids with a glass window or roll-top let guests see and serve without losing much heat, and the capacity in litres tells you how much fits in the food pan.

How to use it in the kitchen

    Fill the water pan about halfway with hot water.

    Light the fuel cells or switch on the heater and wait for the water to steam.

    Fill the food pan with hot food and set it in place with the lid on.

    Top up water during long service and keep the lid closed between servings.
