What it is
A rotary oven is the workhorse for high-volume bakeries. A whole rack of trays rolls into the chamber and turns slowly on a rotating axis while it bakes, so every tray browns evenly.
How it works
A burner or electric elements heat air that a fan circulates around the rotating rack. The rotation and airflow together remove hot and cold spots. Steam can be injected for crust. The brochure lists 12, 16, 32 and 64 tray models, all for 400 by 600mm trays, with a working range of 20 to 300 degrees Celsius.
