What it is
A lamp warmer holds cooked food at a safe, appetising serving temperature for the minutes between the kitchen and the guest. Gantry and single-arm models sit over a carving station or pass, while hanging lamps suspend from the ceiling.
How it works
An infrared bulb in a reflective shade radiates warmth directly onto the food surface, keeping the top from cooling and drying out, while a base plate or tray catches and spreads gentle heat from below on models that have one. Heat stays local, so the room does not warm up the way it does with a heated cabinet.
How to use it in the kitchen
