What it is
A bain marie holds cooked food hot in pans set in a heated water bath. The gentle indirect heat keeps sauces and soups from scorching or drying.
How it works
Water in the well is heated electrically or by gas, and food pans sit in it. Steam and heated water warm the pan sides evenly, which is much gentler than direct heat. Wells take gastronorm pans, so pan sizes are standard.
How to use it in the kitchen

Fill the well with water to the marked level.
