What it is
A salamander is an overhead grill that finishes dishes with intense top heat: melting cheese, browning gratins, toasting and keeping plates hot before service.
How it works
A powerful gas or electric element radiates heat down onto food on a grid below. Lift models raise and lower the grill or the rack so heat can be adjusted quickly.
