What it is
A tilting braising pan is a wide, shallow, heated pan that fries, boils, stews and braises, then tilts to pour the food out without lifting.
How it works
A heated base warms a large flat-bottomed pan, and a hand wheel tilts it forward to empty. The wide surface lets you sear meat and then add liquid to braise in the same pan.
