What it is
A cabinet soup kettle is a large jacketed or direct-fired pot on a stand, made to cook stock, soup, sauces and porridge in the hundreds of servings.
How it works
Heat from a gas burner or electric element warms a deep vessel. A tap at the front draws off product, and a lid keeps heat in during long simmering.
